We’ve spoken about this before, where days can blend together and the next thing you know you realize you haven’t seen one of your closest friends for a few months. It’s easy to get caught up in the mayhem of work and meetings and events, and then when you have some down time you spend it on your own with a novel or a magazine. With the consultancy and the blog, things get messy and crowded easily. Add in regular visitors and it gets completely overwhelming.

Right now I’m competing against 3 major deadlines and have a long, long list of to-dos. I’m not one to procrastinate, but it’s hard to keep up sometimes. Although, things have gotten significantly better since I’ve got some help, but it’s just that time of the year where you’re entertaining more than you can handle and you’re looking for a quick meal too.

With everything going on, one thing that I’ve learnt since living on my own is the importance of having a few good recipes in your arsenal that are quick, easy and indulgent. Cue in this chili feta dip. It’s salty and spicy, green and refreshing, quick and easy. A chili feta dip is one of those dishes that is perfect for a mediterranean sandwich when you’re hosting a meal and a great addition to a simple vegetable platter. The easiest to prepare and the most talked about item on the menu. So it’s something that I whip up if I can fit in a friend visiting or hosting a little gathering done in minutes with minimal prep!

Serves 4-6

Chili Feta Dip

  • 3 tbs extra virgin olive oil
  • 3 large red chillies, chopped
  • 2 large spring onions, chopped
  • a little olive oil
  • handful of fresh coriander, chopped
  • few pinches of chaat masala
  • a 200g/7oz block of feta cheese
  • soft bread & vegetables, to serve


Warm the olive oil in a non-stick frying pan then add the chillies and spring onions. Let them sizzle briefly. You want them to be soft, but not browned. Add half the coriander to the pan then lower in the block of feta. Let the cheese slightly softed then serve with the chillies, chaat masala, and add the remaining fresh coriander.
