Yesterday, I flew from London to home in Orlando, Florida. I’m here for a bit of work and play. Firstly, I have to sort out a few business related things #paperwork. Secondly, I have to clear out my room because I am officially completely moved out of my parents’. Tomorrow is when I embark on cleaning out my room and I know it’s going to be full of so many memories. I probably won’t be able to cope. On the flight over I sat close to an older man. I could see his computer screen in the distant, which included elaborate charts and graphs. I didn’t really understand them and should be snooping either. I’m a bit restless on long-haul flights and need to walk around every so often. As everyone around me snoozed, he was working {as was I}. Our eyes met a few times and soon I struck up a conversation.

Serves 2

Sweet Potato Power Salad

  • 1 medium sweet potato, roasted & cubed
  • 1 sweet onion, caramelized
  • 2 beetroots, roasted and cut
  • 1 quarter lemon, juiced
  • 1 tbs olive oil
  • 1 tsp ground cinnamon
  • salt and pepper
  • greens, arugula & spinach
  • feta cheese & pumpkin seeds to garnish


Add the greens in a large salad bowl. Add the lemon juice and olive oil. Gently massage into the greens. Add the sweet potato, beetroot and feta cheese. Top with cinnamon and salt/pepper. Toss the salad. Garnish with caramelized onions and pumpkin seeds.

He was a maths professor teaching at Imperial. He was visiting his 94 year old cousin in Atlanta and was going down to Ft. Meyers a few days later to visit his niece. He doesn’t have siblings nor a wife, so this was his closest family. He was excited to get out of London for a bit, but already had too many obligations at home to keep him completely emancipated during the holiday. I think he was left handed {as am I}. We ended up talking for the last fourth of the flight. I told him how I was visiting my parents and brother, meeting the new family kitty. Shared my passions in history, travel and fashion. We gossiped about one of the air hostess who was shamelessly flirting with a married passenger as we nibbled on some cheese and sipped on orange juice. On the ride home with my brother, he asked if I sat close to anyone interesting. I enthusiastically told him about my conversations, but realized I never knew his name. Looking back, I {always a chatty cathy} usually develop a bond with my travel neighbor, I become so engulfed and know so much about their life—except the essentials. It’s like I confide with a stranger, open up about things my closest friends may not necessarily know and then we say goodbye and a piece of me will remain with them forever…

Nothing to do with the narrative above. It’s just something I’ve been thinking about over and over again. Sweet potato and beetroot combination is something that is fit for autumn, but my days recently have been long and a bit nebulous. I won’t know if I’m coming home at 8pm or 12am and am looking for ways to keep myself healthy and sustained. It’s that perfect combination of sweet and salty, nutty and earthy. And don’t throw away the beetroot stems, just sauté them with lemon and rosemary. PS - I also added some sunflower seeds to the mix because I needed to do a bit of pantry tidying.
