Oven Baked Salmon Kabobs

Ever made a dish over and over and over again and you distinctly remember the first time you made it yet never remember the other times? I remember the exact day I made these oven baked salmon kabobs for the first time. The peak of summer, I was wearing this outfit and getting ready to watch The Angels’ Share {I highly recommend}. I sat next to my friend, Aart and shared a bit of my dinner with him. Nat sitting across from me munching on Tesco’s sweet and salty popcorn. Eventually Euan came over to watch the last bits of the film.This dinner reminds me of the summer days that swept right by. I guess I’m getting a bit nostalgic as I prepare for my trip over for graduation. As much as I’m enjoying home and family, I’m trying to hold onto the St. Andrews memories.

Oven Baked Salmon Kabobs

Recipe
ingredients
  • 2 Salmon Fillets, cut in 1-inch cubes
  • 2 Bell Peppers, cut in cubes
  • 4 lemon slices
  • 1 tbs honey
  • 4 garlic cloves, minced
  • 1 tbs extra virgin olive oil
  • 1 tbs grainy mustard
  • 1 tsp dried italian seasoning
  • 1 tsp paprika
  • salt and pepper to taste

method

Place 4 wooden skewers in water for at least 1 hour. This will prevent the salmon from sticking too much.

In a small bowl, whisk the honey, mustard, garlic, olive oil, italian seasoning, paprika, salt and pepper. Add the salmon to the bowl, mix so the marinade coats everything. Cover and leave aside for 30 minutes.

Preheat the oven to 425F.

Prep the salmon skewers by threading the salmon, peppers, and lemon slices. Using a kitchen brush, rub extra marinade over the salmon and peppers. Place the skewers on top of a baking dish or pan, so the end of the skewers rest on the edge of the baking dish and the salmon and peppers are over the baking dish yet not in it.

Place on the top rack and bake for 5 minutes. Then broil for an additional 3 minutes.
