Chai Spiced for the Soul

This might be a bit of a sappy post because it will be the last one for 2018. I was going to do a reflective post that also incorporated the most used products of the year, but I thought we all just needed a break. So I’m passing you a glass of my chai spiced mulled wine and hope the warm goodness makes your soul happy. Growing up, any time my mom handed me over anything chai spiced it meant that comfort and warmth was on its way.

I’m looking back at 2018 and I am actually quite proud of all that I have accomplished both productively and personally. I came into the year without major goals just because I had accomplished one of my biggest feats in December 2017. So it feels that 2018 was more about me. I saw this year as a major year for growth. I used to be quite stubborn and wanted things a certain way. For example, I never wanted to create content that was great for SEO. I know that if I did it, my blog would grow exponentially. What happened? I ended up finding a way to incorporate SEO into my normal blog routine and grew this corner of the internet so much that it has enabled me to pay bills and make investments. To be completely honest with you, I wasn’t motivated by this at first. It was until Ryan from Made by Kingfisher, a web design agency, helped me out and made me realize how easy it was. As of today I can say that my blog is gone from a side hobby to {another} full time job. I developed new skill sets and challenged myself in ways that has done more than just help me grow.

Another thing that I have achieved this year is mentally being able to see London as home. From the blog and photos on Instagram, you might consider my life to be glamorous. Much like most of social media, a lot goes behind each photo and video produced. I struggled heavily with people in the UK, in the workforce and considered moving back. I know that I needed to stick with it because the toughest obstacles in life bring the biggest rewards. My Expat Experience series from the summer helped me connect with so many of you {and you are the ones with the chai spiced mulled wine in your hands}. The series also was a form of therapy as I finally finished the chapter of feeling so in-between.

The final major achievement for this year was my ability to take time off. I used to work around the clock. If I wasn’t a consultant, I was a blogger. If I wasn’t a blogger, I was a consultant. If I was taking a break from both, I was studying or reading for work. I never let myself have a lie in or a movie night or a dance all night kind of weekend. This year, I incorporated more off time and found myself being a lot more productive and giving my time more value.

Ultimately, this chai spiced mulled wine is then a warm glass of comfort and celebration. It commemorates the festive season, a special moment and big achievements.

This chai spiced mulled wine recipe is aromatic, flavorful, slightly spiced and full bodied. The aromas and the taste come from the spice mixture that my great grandmother formulated for her cups of tea and have ever since passed down to my generation.

Chai Spiced Mulled Wine Recipe

ingredients
  • 1 bottle red wine
  • 1/4 cup granulated sugar
  • 1 orange, peeled and juice
  • 7-10 black peppercorn
  • 7-10 cardamom pods
  • 2 cinnamon sticks
  • 1-2 star anise
  • 4 1-inch slices of ginger

method

Using your Ullo Wine Purifier, decant your wine to filter the sulfites and aerate the wine.

Temper the black peppercorn, cardamom pods, cinnamon sticks and star anise in a hot pan. This will create some cracks in the dried spices themselves and bring out the oils.

In a large pot, add the orange juice, orange peel, ginger and sugar over low-medium heat. Keep stirring for a few minutes and then add about a cup of the wine. Keep stirring until the sugar dissolves. Then add the rest of the red wine and bring the heat down. Once the mulled wine simmers, turn it off and let everything in the pot infuse for minimum 30 minutes.

When ready to serve, just heat up the mulled wine, pour into mugs and serve!
